We’ve been trying to eat healthier over the last few months. We’ve got a handle on healthy snacks that we love, and we’ve even stayed pretty committed to eating a salad every day for lunch. Some days – we just crave buckwheat banana pancakes… but who doesn’t, right?
Since we really like mozzarella (and cooking with it) we decided to toss it into some wraps and melt them in the pan. The result is a great, light snack or lunch item.
So, we’ll tell you step-by-step how we make them (with photos), what you can add or leave out, and what to serve them with! Ready to cook? Let’s grill some wraps!

How to Make Grilled Tomato Mozzarella Wraps
This is how we make our grilled tomato mozzarella wraps. Just follow the steps and you should do just fine! Keep in mind we usually add spinach but we didn’t have any!
Start by washing and cutting the tomatoes and mozzarella into smaller pieces. They need to be small but not tiny since they will roll up into the wraps anyways.
Once the insides are cut up, place everything in a small mixing bowl. This is where we would include the spinach, too. You could also add avocado if you wanted to. There are loads of substitutions and additions, honestly.
Next, add in the olive oil, salt, pepper, Italian spices, garlic power – and even things like paprika or chili powder if you want a taste of spice.
Mix everything together well so that all the tomato and mozzarella is nicely coasted. At the same time, try no to mash the tomatoes to pieces… lightly toss and turn, really!
Next, spoon the wrap “inside mix” into the wraps. Depending on your wrap size, be sure to NOT OVERFILL THEM. You need to be able to close them and roll them properly or else they won’t grill in the pan as nicely. Then they just become a big mess.
Next, heat up your pan up to medium heat. We don’t use oil and place the wraps in to toast on the open side to that the “flap” grills together and closes the wrap. This is important for later.
Now that the wraps are grilling and toasting (and they are closed), turn them in the pan to toast all the other sides. You are also watching the insides to get hot to basically melt/warm the cheese. You might see a bit of juice oozing out – this is normal.
Grilled Tomato Mozzarella Recipe
- 2 tomatoes
- one mozzarella ball
- wraps (small, can be large)
- Optional: a handful of spinach, diced avocado
- Olive oil (lightly coated)
- Spices: salt, pepper, garlic powder, Optional: paprika, chili powder
Just so you know, these ingredients make about 4 small wraps. It depends on how large you wraps are because you will want to fill them but still be able to roll and close them. If they don’t close, that’s bad for grilling to be honest.
Here are the step-by-step instructions for how we make our bean zucchini fritters.
- Wash the tomato, drain the mozzarella (if fresh)
- Dice tomato and mozzarella ball into small pieces
- Place the cut food in mixing bowl
- Add salt, pepper, olive oil, Italian spice, etc and mix well
- Spoon small amount into wraps, roll wraps
- Heat up frying pan to low/medium heat, place wraps in
- Brown until golden brown on the “flap” side of the wrap (seal them with the grill)
- Rotate the wraps to evenly brown + melt the insides
- Serve, garnish, and enjoy!
